* 4 peaches, peeled and chopped
* 2 tsp. lime juice
* 8 pieces microwave bacon
* 1 cup peach yogurt
* 1/3 cup mayonnaise
* 2 tablespoons raspberry vinegar
* 1 cup pecan halves
* 4 cups cooked, cubed chicken breast
Preparation:
Combine peaches with lime juice in small bowl, toss gently and set aside. Cook bacon as the package directs; drain and cut into 1/2" pieces.
In large bowl combine yogurt, mayonnaise, and raspberry vinegar and mix well. Add peaches, bacon, pecans, and chicken; stir gently to coat. Serve immediately or cover and chill 3-4 hours before serving. Serves 4-6
